They used coring holes to get behind the wall and cabinets so that flood cuts would not have to be done.

The crew used a instrument called Injectidry.

Injectidry is used to dry hidden areas of moisture and under various types of flooring and subflooring. The panels can even be placed on plaster walls or other dense materials to help with a drying process.

The moisture meter being used is a penetrating moisture meter which have probes to allow testing within wall cavities and underneath wood flooring systems, causing minimal damage to the surface.
